The Meal Deal: Easy Crock Pot Turkey Chili

January 25, 2016

How did you survive #Jonas? Being snowed in for a whole weekend = me being super productive and of course praying the power wouldn't go out so I could make my meals. The perfect winter meal is chili and I think it tastes even better on a snowy weekend when you can't leave the house. I know there are so many chili recipes out there, but I think I've finally perfected mine. It's packed with flavor and ingredients - so keep reading for the easy recipe! (But seriously, is there anything difficult when it comes to cooking in a crock pot? Doubtful.)

Ingredients:

1 box of quinoa pasta
1lb ground turkey breast
1/2 of a large onion, diced
2-3 cloves of garlic, diced
2 small (or 1 medium) green bell peppers, diced
1 medium orange pepper, diced
1 28oz can of crushed tomatoes
2 14.5oz diced tomatoes
1/4 cup tomato sauce
1 15.5oz can red kidney beans
1 15.5oz can black beans
2 tbsp chili powder
1 tsp cumin
1 tsp paprika
1 tsp Worcestershire sauce
salt/pepper to taste

Directions:

1. In a skillet, add a drizzle of extra virgin olive oil (or coconut oil) and saute the turkey breast, onion and garlic until the turkey is cooked through

2. Drain and rinse the black and kidney beans

3. Add the turkey mix, beans and the rest of ingredients into the crock pot; simmer on low for 8 hours. (You can also add in the uncooked quinoa pasta but my crock pot was full so I made it separate then added it later.)
