It's that time of year for pumpkin spice everything! Every store I've shopped in there's certainly no shortage of PS items I want to try: pasta sauce, cereal, crackers, tea, Oreos (yet eww at the same time) - but you get the idea.

Even though I'm still clean eating I want in on the pumpkin spice action, just not the boxed "stuff" (that I'm sure is delicious) with unnecessary ingredients. I came across pumpkin spice oatmeal - almost bought a cart-full - but then decided to put my cooking skillz to use and make my own version.

This recipe is made with steel-cut oats which are considered a "power food" because they are an excellent source of fiber, vitamins and protein. So hop on the #basic bus with me and let's enjoy this yummy breakfast together.

21 Day Fix/Extreme Pumpkin Spice Oatmeal
(adapted from the 21DFX PB & Strawberry Oatmeal)
Ingredients:

1 cup water
1 pinch sea salt
1/4 cup steel-cut oats
1 1/2 tsp pumpkin puree
1 pinch cinnamon
1 pinch pumpkin pie spice
drizzle of pure honey
1/4 tsp chia seeds (optional)

Directions:

1. In a sauce pan, bring water and sea salt to a boil over medium high heat
2. Reduce heat to low; add steel-cut oats. Cook for 15-20 minutes stirring frequently until water is absorbed. Remove from heat
3. Add pumpkin puree, cinnamon, pumpkin pie spice and honey; mix well
4. Top with chia seeds if desired (you can also top with raw sesame seeds or pumpkin seeds)

Notes:
- Since the pumpkin pie spice has cinnamon in it, you don't need to add the extra, but the additional "pinch" really brings out the flavor more
- You can swap the honey for agave nectar
- If you're making the oatmeal ahead of time to reheat the next day or beyond, add a splash of water or almond milk then microwave and stir

Makes 1 serving. 21DF/DFX container equivalent - 1 yellow, 2 tsp
