Seeing Pink

I was a nervous nelly when these hot pink skinnies were en route to my mailbox. Nervous and excited. As soon as they came - I tried them on and I now love them even more than online. For those of you not sure what size to get (like me) I followed the sizing chart and got my normal size. They are perfect. Talk about stepping out of my comfort zone! ;)

Over the weekend Matt and I attended his work 'holiday' party in D.C.
This is an example of how I'm taking more risks with fashion. Nothing says risky like a pair of green corduroy pants!! I wanted to be a bit more dressed up while also keeping in mind the party was at an Improv club. I love the bright green with the navy blue striped sweater. (And even though the weather was not conducive to my shoes, I wore them anyway :)

...But a goodie!

Mac 'n Cheese

This meal never gets old to me! I just ate it for the 4th day straight. This time, I topped it with Corn Flakes for extra crunch.

Here's my recipe:


1 pkg (box) elbow pasta
3 tbsp. margarine or butter
3 tbsp. flour
2 1/2 c milk
1/2 tsp salt
1/8 tsp pepper
1/4 c minced onion
2 c or 8 oz shredded Cheddar cheese
1/2 c bread crumbs (or Corn flakes)


1. Cook pasta. Heat oven to 350 degrees
2. In a medium saucepan, melt margarine. Stir in flour, then gradually stir in the milk. Cook, stirring constantly over medium heat until sauce thickens; stir in salt & pepper
3. Add onion and cheese -- stirring in a figure 8 until all melted
4. Add elbows to sauce; put into 9x13 baking dish. Top with bread crumbs or corn flakes, bake 30 minutes

Spicy Mexican Stew

Added garnish: tortilla chip strips for extra 'crunch'

Matt wanted to make a different kind of stew so this is the result of throwing stuff in the crock pot....


2 lbs chicken breasts, cut in bite-size pieces
2 cans of corn (or 1 large bag frozen corn)
2 peppers, cut into small slices (we used 1 bag of frozen pepper strips)
1/2 white onion
20 oz chile sauce
32 oz chicken stock
6 oz can tomato paste
1/3 cup flour
1 tsp salt
1 tsp black pepper
1 tsp crushed red pepper


Combine all ingredients (including raw chicken) into crock pot and simmer for 6-8 hours. Serve with rice. It's that easy, delicious and FULL of flavor! Enjoy :)

Closet Inventory

Yes, I organize my closet in the colors of the rainbow!

If you go shopping haphazardly and end up with 5 pairs of black pants.. this FM post is for you!

It's imperative you take an "inventory" of everything you have. Pants, tops, dresses, even shoes and jewelry. No need to gravitate toward those black heels when you have 4 pair (I'm still working on that myself). If inventory seems weird to you -- just be glad you aren't taking inventory of a WHOLE store. Been there, done that many times!! Anyways, I hung out in my closet for a while to take inventory and actually had fun. (weird?)

Here's how to do it:

1. Separate your clothes, shoes and jewelry. You could even separate further ( i.e. dress pants, dresses, short sleeve tops, etc.)
2. Write down what you have. Especially if you have a lot of 1 item and really don't need to buy anymore!
3. When shopping, keep the list with you (or in your head). That way, you can buy items you don't have and think about combining your new buys with what's already in your closet. Hellooooo new outfits! :)

This is a great way to be organized and be more thorough when you're shopping. You can search for those great heels or that dress you know isn't similar to what you already have! I'm even putting together a 'fashion book' of sorts: clothing I already have, and my dream pieces I want to watch out for.

Pork Tacos

I'm always on major recipe search and came across a fun Rachael Ray one this week! While searching for all the necessary ingredients at the grocery store, and coming up empty on some, I had to do some substituting. Check out the (modified) recipe below.

Crock Pot Pork Tacos


3 whole Ancho Chiles*
3 whole Pasilla Chiles*
4 cloves garlic, unpeeled
2 to 3 Chipotles in adobo sauce*
1/2 medium white onion, roughly chopped
3 tbsp EVOO
2 tbsp honey
1 tbsp cider vinegar
Kosher salt
2 tsp dried oregano, preferably Mexican
3 3/4 cups chicken broth
4 lbs boneless pork shoulder (untrimmed), cut into chunks
Freshly ground pepper
2 bay leaves
1 cinnamon stick
corn tortillas
assorted taco toppings


1. Microwave the ancho and pasilla chiles and the garlic until pliable ( 2-3 minutes) Stem/seed peppers, peel garlic and put in blender
2. Add chipotles, onion, 2 tbsp olive oil, honey, vinegar, 1 tbsp salt and oregano to blender; puree until smooth
3. Heat remaining 1 tbsp oil in large skillet over high heat. Add chile sauce, fry for about 8 minutes. Add chicken stock and reduce until slightly thickened
4. Season the port with salt/pepper and transfer to large slow cooker. Add bay leaves, cinnamon and sauce mixture
5. Cover and cook on high until meat is tender, about 5 hours
6. Discard bay leaves/cinnamon stick. Shred port with forks, season with salt/pepper. Serve in tortillas along with your favorite toppings

*I could not find the exact peppers in the grocery store, so I used 3 Jalapenos, 3 Anaheim and chile sauce. Also, be sure to wash your hands VERY well after cutting the peppers and don't touch your face. (Trust me, I learned the hard way. My face is still burning as we speak and it is not pleasant.)

^^ Update: It was not fun holding a wet paper towel on my face for 3 hours to (I thought) relieve the burning. So imagine how hard it was to not hold it on my face while I Googled "How to relieve pepper burns on your face." The best relief I read: rubbing alcohol. And it really works.

History buffs, or those who are just fascinated by presidents and their lives (that's me) this is a must read book! It chronicles the events leading up to -- and after -- Lincoln's assassination. It focuses a lot on John Wilkes Booth and his deep hatred for Lincoln. (I had no idea the extent of it!) Definitely worth your time reading!!

OPI "Teal the Cows Come Home" & OPI "Black Onyx"

My new nails of the week!

I'm playing with colors and designs and I love how these turned out! They look like clouds -- my right hand doesn't look as perfect which is why it's not pictured. (Gotta get better with using my left hand!)

It's very easy, too. Starting at the left of the nail (halfway down), with your "cloud" color (for me, the OPI black) draw a line up to the tip of the nail... making the next line shorter than the previous one.

*Be sure you leave a little bit more polish on the brush to get the rounded edges. Top with a clear coat once dry - and done. I can't wait to play with more colors!

Operation Get Organized

I have always loved to be organized. Since I haven't started my new job yet, I've been going around organizing and reorganizing everything in our apartment. As I was sitting on the floor with my buttons everywhere, I realized there are some easy ways to start getting organized in 2012.

First up, I found myself only using 1 brush to apply makeup (my eyeshadow brush) but I have way more in the set that need used. I've had the square glass container with stones in it just sitting on my vanity so I combined the two! All my brushes right where I can just grab and use. I think it looks really cute, too!

Living very close to the Container Store I'm finding even more fun ways to organize and I've been looking for something to store my (growing) nail polish collection.

I finally found these acrylic polish organizers (thanks to my sister). I only bought one to try, but I'm definitely getting more! (Only these size bottles fit though. OPI and Nicole by OPI bottles don't, unfortunately.)

And one more idea! Thanks to Pinterest, I found a much-needed way to organize my bangles in one place. This is actually a very tall old toilet paper holder my Grandma was going to get rid of. Luckily, she heard I was looking for one and saved it for me! I was going to cover it with black curly ribbon but I like the natural worn metal look.

These three EASY organizing ideas are great (cheap!) to begin with. I'm definitely going to share more in the future so stay tuned!! I hope you like them, and try them at home as well! They work! I'd love to hear what you think. :)

My Tuesday

This is what my day consisted of: laundry, folding laundry, laundry, sewing buttons back on Matt's dress pants, laundry, organizing with some TV sprinkled in the background. It was a pretty fun day, though! (weird?) I don't mind hand sewing and I'd eventually like to get into sewing with a machine... one day. After I sewed buttons back on, it got me thinking: why not organize ALL my buttons. I save them all that I get from clothes and they needed organized. I spent a good hour+ on it (don't judge me). I loooove organizing, reorganizing and just getting rid of things I haven't used in a while. Makes me feel so much lighter (even though I don't have much to begin with, except for clothes and shoes ;)
However -- after being a bum today I think maybe tomorrow I'll take a trip to Target. I need some things anyway... including an hour (or 5) out of the apartment. :)

Steelers Sunday

My Sunday best.
Forget the jewelry, fancy clothes and high heels. Nothing like a relaxing Sunday at home with no agenda but cheering on my Steelers! Matt and I (accidentally) decided to skip dinner and made a yummy dip to dive into during the game. I am totally okay with that. :) See recipe below!

Buffalo Wing Dip


1 block cream cheese
8 oz. buffalo wing sauce
1 cup ranch dressing
2-3 cups shredded cheese
20 oz. canned chicken, shredded


1. Heat oven to 350 degrees
2. Mix all ingredients together, bake uncovered until heated through and bubbling

These days, I'm thinking -- and looking-- outside of the box for fashion, food and fun ideas.
Wouldn't you know: as I was putting sour cream on my lunch yesterday (good ol' Mac & Cheese)* it hit me! Well, when I was trying to open the darn container of SC, I discovered the menu for dinner. Behold..........

Layered Enchilada Bake


1 lb. ground beef
1 large onion, chopped
2 cups salsa
1 can (15 oz) black beans, drained/rinsed (we didn't have any so I >gladly< omitted them)
1/4 cup Zesty Italian Dressing
2 tbsp. taco seasoning mix
6 flour tortillas (8 in.)
1 cup sour cream
1 pkg (8 oz) shredded cheese


1. Heat oven to 400 degrees
2. Brown meat & onions in large skillet; drain. Stir in salsa, beans, dressing and seasoning mix
3. Arrange 3 tortillas (I used 2 because they covered most of the pan) on bottom of 9x13 pan. Cover with some of the meat mixture, sour cream & cheese. Repeat layers, cover with foil
4. Bake 40 minutes -- and remove foil after 30 minutes. Let stand 5 minutes before cutting and serving

It's like a Mexican lasagna! Ole!

Note: I got 3 layers out of it. And on top I put tortilla chips and a bit more cheese. The chips were so crispy and yummy when it came out of the oven!

*PS~ I'm not crazy. Sour cream on mac & cheese is phenomenal!! Try it :)

New Nailpolish

Nicole by OPI ~ "Kiss Me At Midnight"
I decided to keep my nails a bit toned down this time. My sister got me this color for Christmas (one of many) and I wanted to try it. It looks different in the bottle than on the nails but I love it. It's almost like an espresso color with a hint of red.


I keep seeing a lot of articles and blogs about people's resolutions for the new year. While there is nothing wrong with that -- and I wish you all the best -- my outlook on resolutions has changed a bit. Why? Because I feel that resolutions are overwhelming and don't work most of the time. Coming up with a list and seeing all the things you want to accomplish/work on/change is daunting!! With that said: I am not totally against making resolutions. IF you stick with them all year they can be great.

This year, I am making a mental list of goals. (While also keeping them attainable -- no "becoming a model") My new year is starting with a whole new job and, in a nutshell, I just want to better myself: exercising when I can, finding a church to attend every Sunday, do more with fashion, work on my patience and just becoming a better person ~ for ME. I think with just a few goals I feel much better than listing 20 things I want to do. I'd also love to travel, but in time I'll be able to afford it!

These are just some of my thoughts on resolutions! What goals are you starting 2012 with??

Champagne Celebration

It's 2012! And for this week's FM post, I figured I'd show you my outfit to ring in the new year. I thought the sweater looked like Champagne bubbles and it worked perfectly with the low-key night with family. (But so much fun!)
